Bagels with cream cheese

Bagels with cream cheese that are fully vegan. Yup! You have heard it right! Same taste and no harm towards animals. Plus way healthier for the planet and for our bodies. Some say this one is even tastier than the animal-based one. Intrigued? Read on!

So far, no matter the type of vegan cheese, cashews seem to be the winner ingredient for the base. Their flavor is pretty neutral and they are very creamy making it a perfect substitute.

Soaking the cashews will improve the creamines, but sometimes I forget to soak them beforehand and I soak them for 15 minutes in hot water. It is not as great but does the job nevertheless.

In this recipe, I am using dill simply because this is the way I liked cream cheese when I was a kid. If you don't like dill you can just skip it or add any other ingredient of your choice. I think it would taste amazing with chopped green onion, dried tomatoes or fresh basil.

Bagels - I wrote that you make sure they are vegan because I am not sure if they always are, to be honest. In my local shop, they have all kinds of them and every single one is vegan, so I have a huge choice!

vegan bagels

Cream cheese:
60 g (½ cup) raw cashews
45 ml (3 Tbsp) plant-based milk
45 ml (3 Tbsp) lemon juice
5 g (1 Tbsp) nutritional yeasts
2 Tbsp chopped fresh dill
salt and pepper to taste

For serving:


1. Soak the cashews in water overnight or for 15 min with hot water.

2. Strain the cashews, place in a blender alongside with milk, lemon juice and nutritional yeasts. Blend well.

3. Add in chopped dill and mix. Add salt and pepper.

4. Spread the cream cheese on bagels and serve with slices of cucumber and tomatoes.

Notes and tips:

1. Make more of the cream cheese and enjoy within next few days. Keep in the fridge up to 4 days.
