Cashew cottage cheese is a great replacement for a non-vegan one. It is creamy and goes well on sandwiches as well as on baked potatoes (polish style!) or as a side for any other meal.

This vegan cottage cheese can be easily made at home with just a basic immersion blender. I hope you enjoy it!

Makes: small bowl                Time: 10 min + time for soaking the sunflower seeds

 

Ingredients:

200 g (1½ cup) raw cashews
water for soaking

200 ml (4/5 cup) plant-based creamer (ex. oat)
20 g (4 Tbsp) nutritional yeast
30 ml (2 Tbsp) lemon juice
3 g (1 tsp) onion powder
1½ g (½  tsp) garlic powder

1-2 tsp freshly grounded pepper
a few pinches of salt

100 g (1 bunch) fresh chives

Instructions:

1. Start by soaking cashews for a few hours or overnight. You also can soak them in hot water for 15 min instead.

2. Drain the cashews and place them in the bowl.

3. Add lemon juice, plant-based creamer (I am using oat), onion powder, garlic powder, and nutritional yeast.

4. Blend it until it's nice and chunky.

5. Add some salt and a generous amount of freshly grounded pepper checking the flavor and adjusting to your preferences.

6. In the end chop one bunch of the chives and add them into the cottage cheese. Enjoy!

Notes and tips:

1. You also can try the sunflower cottage cheese or tofu cottage cheese if you do not have/want to use cashews.
2. You can also use unsweetened plant-based milk instead of creamer, but the cottage cheese will be less creamy. Add it slowly, until you get the desired consistency. Another option is to use natural plant-based yogurt instead.
