Green asparagus tagliatelle salad

When the season comes for asparagus I am always super excited. The green and the white ones have some great flavors to offer. This is the salad that is quick to make so you will not need loads of preparation to enjoy this great food. Green asparagus are very nutrition dense. this is why it is great to incorporate them into your diet. They contain high amounts of Folate and vitamin K.

Green asparagus tagliatelle salad​ is a great idea for a light lunch or a side salad. I focused here on oil-free dressing and on top of that it does not have any salt in a bad way. The only salt here comes from miso which is made out of fermented soybeans and is very beneficial for our body.

Makes: 1 serving               Time: 10 min

 

Ingredients:

Salad:
240 g green asparagus
1 medium tomato
40 g walnuts
50 g (1/2 medium) peeled orange

Dressing:
12 g (1 Tbsp) brown miso (I am using Mugi miso)
12 g (1 Tbsp) lemon juice
12 g (1 Tbsp) water
50 g (1/2 medium) peeled orange
pinch of chili

Instructions:

1. Remove the hard part from the asparagus, and discard. Cut off the tops. Using the veggie peeler cut the asparagus lengthwise into thin straps.

2. Chop the tomato, walnuts and orange. Place all the ingredients on the plate. Top with the asparagus tops.

3. Prepare the dressing: chop the orange very finely - make sure you do not lose the juice - add it to the dressing too!

4. Mix the orange with all the other dressing ingredients and cover the salad with it! Enjoy!

Notes and tips:

  1. To remove the hard part from asparagus simply grab them at the ends and with the other hand bend the rest. It should break at the point that separates the hard part from the soft one.
