invigorating green juice

This invigorating green juice is one of my favorite homemade cold remedies. Loaded with vitamins speeds up the recovery. The best juice to keep you going!
Why juicing and not just eating the veggies? It is hard to eat that amount of veggies in one serving. Turning them into the juice allows getting those vitamins easily. On top of that - when off weather we often do not feel like eating much - so that is another plus of getting the nutrients in a form of juice.
This juice is a great thing to have when you are starting to feel a bit off, or during the time you have a cold. However, it can be enjoyed anytime - I love to have it also when I feel perfectly fine! When I am very busy and do not have time to make sure I eat enough greens in a day - the juice is just a super simple way to get it all in.
Juicing veggies is also a great option for people who are trying to reduce their fiber intake due to health reasons without missing on important nutrients and vitamins.

Makes: 2 servings Time: 10 min
Ingredients:
570 g fresh cucumber
10 g fresh turmeric
3 g fresh ginger
30 g fresh parsley
190 g fresh kale
170 g fresh spinach
1 medium lemon
pinch of pepper
Instructions:
1. Clean all the veggies, ginger and turmeric and cut into pieces that fit in your juicer. Do not peel anything and use stems as well.
2. Make the juice and before serving squeeze juice from the lemon and add the pinch of pepper.
Notes and tips:
1. Do not throw away the pulp – it is fully edible – the recipe coming soon! 🙂
