lemon and mint popsicles

Lemon and mint popsicles - easy, vegan, tasty, super healthy, and very refreshing. They are a great summer recipe to enjoy while the sun keeps us very warm.

Using whole foods it's easy to make this treat very healthy. The average popsicles in the shop are filled with sugar and artificial flavorings. Luckily there is nothing easier than homemade, whole-foods popsicles.

You can add some sweetener of choice (like maple syrup) if you prefer to make the popsicle sweet. I like it sour and minty - it's really perfect for summer days!

Makes: 4 popsicles                Time: 10 min (+ a few h in the freezer)

 

Ingredients:

6 g (40 medium-sized) fresh mint leaves
200 ml water
200 ml (4/5 cup) lemon juice

Important equipment:
4 x 100 ml Popsicle molds

Instructions:

1. Start by finely chopping mint leaves.

2. Boil the water.

3. Place the leaves in the cup and cover with boiled water. Cover the cup and let the mint tea brew for 3-5 minutes.

4. Let the mint tea cool down.

5. Pour the tea into a big jug and add the lemon juice and mix.

6. Pour it into the popsicle molds.

7. Place the top part of the molds and put the popsicle in the fridge for a few hours.

8. Once you are ready to eat leave the popsicle out for a few minutes or pour some water over to make them come out easily.

Notes and tips:

1. You can add some sweetener of your choice (like maple syrup) if you would like popsicles to be sweet.

2. Rolling the lemon before cutting with make it easier to squeeze the juice out.
