Nutella milk

Nutella milk is a great treat that you can have every day. It's healthy, yet very delicious. You can make it with just a few ingredients and it takes very little time to make it. As an extra, you will be left with the nut pulp that then you can turn into the Nutella bliss balls (the link to the recipe below). It is a great and very easy vegan recipe that will spoil your taste buds!

The milk can be enjoyed for breakfast with your favorite granola or you can just drink it by itself - it tastes heavenly! It can be stored in the fridge for up to 3 days.

Makes: 3 cups                Time: 20 min (+8 h soaking time)

 

Ingredients:

180 g (1 cup) hazelnuts

130-170 g (6-8) pitted medjool dates
12 g (2 Tbsp) cocoa powder
750 ml (3 cups) water

Instructions:

1. Preheat the oven to 180°C/356°F.

2. Place the hazelnuts on the baking tray lined with baking paper. Make sure they have a bit of "wiggle" room. Bake the hazelnuts (middle rack, conventional settings) for 10-15 minutes, mixing every 5 min. You will notice the skin of hazelnuts cracking a bit.

3. In a bowl place a clean cotton cloth and place hazelnuts in it. Let them cool down.

4. Close the roasted hazelnuts in the cotton cloth and rub energetically until the burned skin comes off from the nuts.

5. Discard the skin.

6. Put the hazelnuts in a jar or a bowl and cover with water. Let them soak for 8h or overnight.

7. Drain the hazelnuts and place them in the high speed blender alongside with dates, cocoa powder and water.

8. Blend everything until smooth. At this point you can drink it - it's creamy and tasty, if you want it to be more thin and milk-like, continue.

9. Place nut-milk bag or a clean cotton cloth in a bowl and pour the hazelnut drink inside. Squeeze all the liquid into the container. You will be left with about 250 g of pulp that you can use to make bliss balls (look the link above). Pour the milk into a glass bottle and store in the fridge for up to 3 days.

Notes and tips:

1. You can also but roasted hazelnuts and skip the step with the oven.
2. The amount of dates depends on your sweetness preferences. You can add a bit, blend and then add more if needed (then blend again).
