If you like peanut-butter jelly sandwich this smoothie is for sure one to try!

Sometimes I am tired of smoothies with banana, so I was playing around and came out with this banana-free, high in protein peanut-butter jelly smoothie. It tastes so good and is a perfect option if you want to boost your protein consumption.

Makes: 2 servings                 Time: 5 min

 

Ingredients:

240 g cooked white beans (1 can)
2 Tbsp peanut butter
3 medjool dates
150 g fresh/frozen mixed berries

Toppings:
fresh/frozen berries
peanut butter

Instructions:

1. Rinse the beans very well. Remove the pits from the dates.

2. Place all the ingredients in the high speed blender and blend until smooth.

3. Pour into cups and top with some berries and extra peanut butter.

Notes and tips:

1. Make sure you use 100 % peanut butter without added oil etc.
2. To boost the protein content you can add some peanut-butter powder or your favorite plant-based protein powder.
3.  You can use home-cooked white beans or use ones from the jar/can.
