Sundried tomatoes and white, creamy beans? Count me in! A super simple recipe for bread spread you can make any time as long as you have a knife and a fork.

It works great on a sandwich, as a dip for veggies or in tortilla wraps. Rich in protein and very affordable! You can smash it with the fork on the go if you do not have access to the blender. Beans will keep you full for longer and the protein they're providing with make this spread a great addition to your post-workout meal! Make sure you try this spread - rich, whole foods plant-based alternative to processed ones from the shop. It is way healthier because it contains no oils*, animal products, and preservatives. I love this recipe as it is so simple. You can make it easier when traveling as it uses very basic ingredients.

Makes: about 230 g                 Time: 5 min

 

Ingredients:

210 g (1 cup) cooked white beans
5 ml (1 tsp) low sodium soy sauce/liquid aminos
1 tsp
dried basil
10 sun-dried tomatoes

salt and pepper to taste

Instructions:

1. Cook beans if using dried ones or strain and rinse the beans from the jar or can.

2. In the cup of the blender place all the ingredients and blend until smooth.

3. Add salt and pepper to taste.

Notes and tips:

  1. Store the spread in the fridge for 3-4 days.
  2. If you don’t have a blender you can smash everything with the fork and chop dried tomatoes very finely. It will be a bit chunky, but still super tasty!
  3. In this recipe, I am using dried tomatoes from the oil, because I had them at home. If you want to make this recipe oil-free use the dry tomatoes not from the oil and soak them before adding in the blender for about 1h so they soften. If you just want to reduce the oil rinse the dried tomatoes from the oil well before adding them in.

  1. On the sun-dried tomato Bean spread one of the ingredients you list is one teaspoon sun-dried tomatoes I know you meant to put one teaspoon soy sauce or amino acids.
