Tomatoes stuffed with tofu cottage cheese - a great appetizer or a side meal. I am in love with it, it's easy to make, looks impressive and it's healthy!

I used to make it a lot before I was vegan, and this version is as good as the original one, but minus harming the animals.

If you want to make a soy-free version of vegan cottage cheese, have a look at this sunflower cottage cheese or cashew cottage cheese (make sure you replace the chives with basil to recreate cottage cheese from this recipe).

Makes: 5-6 servings                 Time: 10 min

 

Ingredients:

5-6 medium-sized tomatoes

Cottage cheese:
200 g natural tofu
10 g (2 Tbsp) nutritional yeast
150 g (¾ cup) natural plant-based yogurt
3 g  (1 tsp) onion powder
20 g (2 handfuls) fresh basil leaves
2 tsp dried basil
salt and pepper to taste

Instructions:

1. Finely chop fresh basil (use also the stem, not just leaves, don't waste the stem :)).

2. Using your hand crumble the tofu into small pieces. Place it in the bowl with the rest of the ingredients for the cottage cheese. Add salt and pepper to taste.

3. Clean the tomatoes and cut off their tops.

4. Using a teaspoon gently remove the flesh from the inside of the tomatoes.

5. Save it and use it while making the tomato pasta or, if you are anything like me, just eat it!

6. Fill the tomatoes with the tofu cottage cheese and cover with tops of the tomatoes.

Notes and tips:

  1. If you are interested in a soy-free version, have a look at my recipe for sunflower cottage cheese or cashew cottage cheese. Of course, use basil instead of chives.
  2. Use good tomatoes that are in season and ripe, but still tender.
