You can of course skip the cheese-making process and just use a store-bought vegan cheese or skip it altogether, but I wanted to show you a homemade option. This cheese sauce is based on the recipe I made some time ago for Mac and cheese, make sure you have a look if you like cheese like dishes. Another great recipe is Nachos with Cheese Sauce.
Makes: 4 tortilla pizzas Time: 20 min
4 (about ø 22 cm/8.6 Inch each) wholegrain tortillas
400 ml (1 ⅗ cup) oat creamer
50 g (¾ cup) nutritional yeast
18 g (2 Tbsp) arrowroot powder/tapioca flour/corn starch
9 g (1 Tbsp) onion powder
4 ½ (1 ½ tsp) garlic powder
3-6 g (½-1 tsp) salt
a pinch of turmeric powder
270 g (1 cup) tomato paste
15 ml (1 Tbsp) olive oil**
4 g (5 tsp) dried oregano
280 g (24 medium sized) cherry tomatoes
32-40 g (8-10 tsp) vegan basil pesto
80 g (4 handfuls) arugula
Notes and tips:
* To make things even faster you can use store bought vegan cheese or skip it altogether. Another option is to make a cashew cheese:
140 g (about ½ cup) cashew butter
45 ml (3 Tbsp) lemon juice
35 g (½ cup) nutritional yeast
6 g (2 tsp) garlic powder
a pinch of turmeric
some salt to taste
Mix altogether and add some water if needed for the good consistency.
** You can skip the olive oil. It adds richness to the sauce but it is not crucial.
1. Vegan Pesto – make sure you find a vegan pesto, the average in the shop is probably not vegan. Look in a vegan section of your supermarket or in health food stores.
