Easy recipe for vegan egg salad sandwich, that will work great as a breakfast or lunch! Quick to make and so good!

About the ingredients: Kala Namak - a black salt that has this sulfurous, egg-like taste and I get it in my local, organic shop. I will leave a link below so you can buy it online.

Nutritional Yeast – if you are new to veganism you might not know about it. It is deactivated yeast and is used in a lot of recipes to add this nice cheesy/nutty rich flavor. It can be used in almost everything – it’s so good! I buy mine locally in a zero-waste shop, but I will link it below if you want to buy it online – make sure you get them as they are a staple!

Makes: 6-8 sanwiches               Time: 10 min

 

Ingredients:

Vegan egg salad:
140 g (8-9 Tbsp) vegan mayo
400 g tofu
4-8 g (1-2 tsp) Kala Namak salt *
3g (1 tsp) onion powder
6 g (2 Tbsp) nutritional yeast
3 g (1 tsp) freshly grounded pepper
8 g (2 tsp) mustard
2-3 pinches of turmeric

25 g (1 bunch) chives

For the sandwiches:
12-16 slices of wholegrain or gluten-free bread
2-3 tomatoes

Instructions:

1. Place all the ingredients of the egg salad in the bowl (besides the chives). Start with 1 tsp of salt Kala Namak and then add more to taste if needed. Add enough turmeric to get a nice yellowish color.

2. Smash all with the fork until tofu is in a form of small chunks. If you want you can also bled it all.

3. Chop chives and add to the bowl with vegan egg salad.

4. Slice the tomatoes.

5. Spread the vegan egg salad on sandwiches, and add the tomatoes. You can also store the vegan egg salad in the fridge for the future use.
