Vegan scrambled eggs

Easy recipe for vegan scrambled eggs, that will work great as an Easter Breakfast! Quick to make and so good!

About the ingredients:
Kala Namak - a black salt that has this sulfurous, egg-like taste and I get it in my local, organic shop. I will leave a link below so you can buy it online, but if there is no option for you to get this salt– don’t worry, it will still taste great.

Nutritional Yeast – if you are new to veganism you might not know about it. It is deactivated yeast and is used in a lot of recipes to add this nice cheesy/nutty rich flavor. It can be used in almost everything – it’s so good! I buy mine locally in a zero-waste shop, but I will link it below if you want to buy it online – make sure you get them as they are a staple!

Makes: 2 big servings                 Time: 15-20 min

 

Ingredients:

Tofu scramble:
splash of liquid aminos or low-sodium soy sauce
splash of water
150 g (1 small) red onion
2 garlic cloves

200 g natural tofu
6 g (2 Tbsp) nutritional yeast
150 ml of water
3 g (1 tsp) sweet paprika powder
pinch of turmeric
2-4 g (½ -1 tsp) Kala Namak salt
8 cherry tomatoes

2 thick slices of wholegrain bread (use gluten-free if GF)

Toppings:
freshly grounded black pepper
4 cherry tomatoes
chopped green onion

Instructions:

1. Peel and finely chop the garlic and the onion.

2. On the pan heat a splash of water and liquid aminos/soy sauce and add the garlic and the onion. Cook them for about 5 minutes and then crumble the tofu in (use your hands to crumble it in!).

3. Add the spices and the water. When adding Kala Namak I recommend you start with ½ tsp and then add more to taste if needed.

4. Let it cook mixing from time to time until the water evaporates. While it cooks cut the cherry tomatoes (for the scramble and toppings and green onion).

5. In the end, add the tomatoes and give them the last stir.

6. Toast the bread on the dry, clean pan, in the toaster or the oven.

7. Serve the toasts buried in the tofu scramble and top with freshly grounded black pepper, cherry tomatoes and green onion.
