Zapiekanka - polish street food in a vegan version. Open sandwich with mushrooms and vegan cheese baked in the oven - simple, but very tasty!

When I was a teenager, whenever I went out with friends I had pizza or "zapiekanka" - polish street food. They sell them everywhere, or at least, used to. Zapiekanka is a simple open sandwich with mushrooms, cheese, and ketchup, but of course, since I became vegan I was not able to just go and buy it. Not to worry though - there is nothing in this world that could not be veganized - including zapiekanka! So yummy! To be honest, way better than I remembered. Or maybe it is just the taste of cruelty-free food that makes every meal so much better?

Makes: 4                Time: 30 min

 

Ingredients:

2 small baguettes (around 30 cm / 11,8 Inch long)
150 g vegan cheese

mushrooms:
1130 g button mushrooms
250 g (1 big) onion
5 big garlic cloves
2 tsp liquid aminos or low sodium soy sauce
splash of oil
water for deglazing

toppings:
ketchup, sriracha or/and green onions

Instructions:

1. Start by preparing the mushrooms. Chop the onion fineley and crush the garlic using the garlic crusher (or chop very well).

2. Chop the mushrooms into small cubes.

3. On a pan heat small amount of oil (or skip the oil and use just water), add the onions with garlic. Cook them for about 3 minutes and add in mushrooms and liquid aminos. Add more water if needed for deglazing.

4. Cook the mushrooms on medium heat for about 10-15 minutes. Add in salt and pepper to taste.

5. Preheat the oven to 180°C/356°F (conventional settings).

6. Cut the baguettes lengthwise.

7. Shred the vegan cheese if you have one in one piece.

8. Place mushrooms on the baguettes, cover with cheese and sprinkle with pepper.

9. Bake for few minutes - until the cheese melts.

10. Top with ketchup, sriracha, green onions or a bit of everything!
